Healthy Energy Bites

Hola Familia!

If your looking to satisfy your sweet tooth, with a non-guilt snack, these Healthy Energy Bites are for you! I find that if I make healthy treats ahead of time, I made healthier choices when I feel the need to stress eat, or I need some fuel for my brain.

The matcha green tea powered bite is probably my favorite, I get that zen uplift but also great antioxidants for the brain. The chia is great for that omega boost, and the almond has some good fat and that yummy crunch. Let me know, what topping are you most excited to use for this recipe?

Best part is, they are super simple to make!

Base Ingredients:

1 1/2 cups shredded coconut

10 medjool dates, soaked for 15 minutes

1/4 cup cocoa powder

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Pinch of Cinnamon

​Toppings for coating: (optional): chia seeds, hemp seeds, cocoa powder, cacao nibs​, matcha powder, sliced almonds, etc.

INSTRUCTIONS:

• In a food processor, grind the coconut into a fine meal.

• Add in the rest of the ingredients, and process again until a sticky dough is formed.

• Scoop the batter by heaping tablespoons onto a baking sheet lined with parchment paper​.

​• Roll each ball between your hands, and then coat them in ​chia seeds, hemp seeds, cocoa powder, or cacao nibs​.

Store the balls in the fridge or freezer.
