Crema de Aguacate & Pickled Red Onions for More authentic Tacos

Let’s Mambo this Cinco de Mayo!!!!

Crema de Aguacate

Ingredients:

2 medium avocados

1/2 cup sour cream (vegan)

1/2 cup water

1 tbs veggie bouillon

1/4 of a fresh onion

2 garlic cloves

1 tsp salt

1/4 tsp black pepper

juice of 3-6 limes

1 or 2 raw jalapenos (the pointier, the spicier)

Directions:

Add sour cream, water, bouillon, onion, garlic, salt, pepper, jalapenos, and about half of your lime juice to a blender.

Blend! (Don't forget to mambo while you're blending!)

Taste it! Probably add more lime juice.

Blend again!

Pickled Red Onions

Ingredients:

1 medium red onion

½ cup apple cider vinegar or white wine vinegar

1 tablespoon coconut sugar or maple syrup

1½ teaspoons sea salt

1 cup hot filtered water

1. Slice the red onion as thinly as possible (use a mandoline if you

have one). Fill a mason jar with the red onion slices.

2. In a medium bowl, combine the vinegar, coconut sugar, salt,

and hot water and stir until the sugar dissolves.

3. Pour mixture into the jar over the sliced onions, making

sure they are immersed, and let sit for 1 hour. Cover and store in

the fridge for up to 3 weeks.
