Easy Vegan Scramble Burrito

Ingredients:

3 cups cooked Chickpeas

1/2 to 3/4 Water

3 Tbsp. Nutritional Yeast

1/4 tsp Black Pepper

1/4 tsp Turmeric Powder

1/4 tsp Salt

2 Garlic Cloves

1/4 cup Parsley or Cilantro

1/4 Diced Onion

1/4 Red Bell Pepper

1 tsp Avocado Oil (or Olive Oil)

(Makes up to 4 servings)

In a Blender add Chickpeas, water, Nutritional Yeast, Black Pepper, Turmeric Powder, Salt, Garlic, and Cilantro.

Blend for a few seconds until mixture is blended, leaving small chunks of chickpeas.

Next: Heat your skillet w/ Avocado Oil.

Dice Onion and Bell Pepper

Sauté Onion until translucent

Add Bell Peppers

Heat until warm (I like my bell peppers half cooked for a fresher taste)

Add half of the blended Scramble (save the rest for the next day, stores well refrigerated)

Set aside once hot.

Heat your tortilla till warm and add to your plate

Add half of your heated up Scramble

Add fresh veggies like tomato, cilantro and avocado

Roll your burrito

For an extra crisp, heat your burrito back up on the flat skillet.
