Banana Oat & Walnut Banana Muffins
These little breakfast muffins are a life saver. Make a little extra and store in the fridge for the next day. Warm them up on a toaster oven and boom, instant breakfast. Also super good as a snack.
Recipe:
1 cup buckwheat flour or oatmeal
1 cup plant-based milk
1 cup frozen banana or 1 whole fresh banana
1/4 tbsp ground flax seeds mixed with 1/2 cup hot water (let soak for a few min before adding in to the rest of the mixture)
1/4 cup maple syrup
1/4 tsp vanilla
1/4 tsp salt
1/2 tsp cinnamon
1/5 tsp baking powder
Walnuts (optional)
Set oven at 350 degrees
Mix in a blender and pour into greased muffin sheets.
Top with chopped walnuts
Bake for 15 min
