Easy Coconut Ice-Cream (Dairy Free)

Dairy free ice cream is now a huge thing. There is a large demand for Plantbased desserts but they are always full of artificial sweeteners. While I do believe in treat days, I like to create Healthier desserts that I indulge in a bit more. Or at least not feel so guilty in a moment of weakness where I eat the whole tub!!

Also, I love coconut! So this is right up my ally.

Enjoy this ice-cream as is or mix in your favorite fruit or nuts.

Ingredients:

2 cans of coconut

1/2 cup Coconut Milk (no fat milk)

1 tsp vanilla extract

1 tbsp of Cinnamon

Pinch of salt

1/4 cup maple syrup

Blend all your ingredients in a blender and pour into two ice trays.

Once frozen, add the frozen cubes into the blender again

Blend on a slow speed and work your way up

Once blended, you have the option of mixing in (by hand) any other ingredients like chunks of fruits or nuts. I mixed in 1 Tbsp of poppy seeds

Pour mixture another container that can be put in the freezer again.

Once frozen, now you can get your ice cream scooper and serve.

Enjoy this easy non-dairy Ice Cream that you can make at home and customize.

Hmmmm…. Some cherries and dark Chocolate would go so good in there, just saying!
