Healthy Vegan Banana Bread

 If you're looking for an easy-to-make, yet incredibly delicious treat, this banana bread recipe is for you. Perfectly sweetened with natural coconut nectar or maple syrup, this bread combines the wholesome goodness of ripe bananas, almond meal, and oatmeal flour. It's a healthier take on a classic favorite, making it a guilt-free indulgence.

Super easy to make and sooooo yummy!

What you need:

  •  4 Ripe Bananas

  • ¼ cup Coconut Nectar, or Maple Syrup

  • ¾ cup Almond Meal

  • 1 ½ cup Oatmeal flour (you can try to make your own oatmeal flour using a blender on high, make sure there is no moisture in the blender before you do)

  • 1 tsp Baking Powder

  • ½ tsp Baking Soda

  • 2 tsp Vanilla extract

  • ¼ tsp cinnamon

  • ¼ Sea Salt or Pink Salt

  • ¼ cup melted Coconut Oil

 !Preheat Oven to 350 F degrees & Grease Pan with Coconut Oil!

Blend in a Blender:

Bananas, melted coconut oil, coconut nectar, & vanilla

In a separate bowl:

Add in oat flour, almond meal, baking powder, baking soda, cinnamon, and salt with a whisk until combined well. Then add your wet banana batter to the mix and mix with spoon or spatula until all ingredients are combined well.

Pour batter in pan, add a few sliced pieces of banana on top carefully, and bake for 60-70 min or until a toothpick inserted into the center comes out clean.

Cool and enjoy!

 Side Note:

Coconut Nectar is my favorite sweetener because its minimally processed, has so many minerals and vitamins, and has a low glycemic index. Its not as sweet as maple sugar or honey, but in my opinion, its super yummy! This banana bread was a hit with my kids and my husband, so it was sweet enough to satisfy our sweet tooth.
