Maple Pecan Muffins (Gluten & Dairy-Free)

What you’ll need:

  1. 1¼ cup almond flour

  2. 2 tablespoons coconut flour

  3. 1/8 teaspoon sea salt

  4. 1 teaspoon baking powder

  5. 2 large eggs

  6. 5 tablespoon unrefined coconut oil

  7. 4 tablespoons maple syrup

  8. ¼ cup chopped pecans

  9. 1 teaspoon vanilla extract


INSTRUCTIONS 

  1. Preheat oven to 325 F and prepare muffin tin by greasing with coconut spray or
    butter

  2. In a medium mixing bowl, combine the dry ingredients and mix together.

  3. Mix all wet ingredients together in a separate bowl and add to dry ingredients.
    Mix until well combined, but don't over-mix.

  4. Add in ¼ cup chopped pecans and stir gently.

  5. Divide evenly into muffin tins (7-8 muffins) and add a few pecan pieces to the top for a yummy decoration.

  6. Bake for 20 minutes or until done. Test by sticking a toothpick in one of the muffins. If it comes out clean, they are done.
